I decided to make homemade pie filling (I used pre-made crusts) for Thanksgiving and since cherry pie is one of my moms favorite I needed to make one! I searched multiple stores for fresh, frozen, and/or canned sour or tart cherries and couldn't find any. And thus we have sweet cherry pie!
Ingredients: Cornstarch, lemon juice, sugar, sweet cherries, almond extract, and pre-made pie crusts.

Sweet Cherry Pie
Ingredients:
6 cups frozen dark sweet cherries,
thawed
½ cup juice
1/8 tsp. salt
¾ cup sugar
5 tbsp. cornstarch
Juice of half a lemon
¼ tsp. almond extract
Pre-made piecrust
Butter
Egg wash
Sugar for decoration
Directions:
1.
Preheat oven to 400ยบ.
2.
Drain cherries; reserve juice.
3.
Place one crust in bottom of pie plate.
4.
Heat drained cherries, salt, and sugar over
medium until boiling.
5.
Stir together cherry juice and cornstarch. Mix
well.
6.
Add lemon juice and almond extract to
juice/cornstarch mixture.
7.
Remove cherries from head and stir in juice/cornstarch
mixture.
8.
Return to heat and cook until thickened.
9.
Cool; pour into crust lined pie pan.
10. Dot
with butter.
11. Cover
with top piecrust lattice.
12. Brush
with egg wash and sprinkle with sugar.
13. Cover
edges with aluminum foil. Bake for 35 minutes.
14. Remove
foil and bake for 15 additional minutes.
15. Let
cool before serving.
