Cinnamon
Roll Cookies
Ingredients
Cookie:
¾ cup butter, softened
½ cup white
sugar
½ cup brown
sugar
1 tsp. cinnamon
2 eggs
½ teaspoon vanilla extract
2½ cups
all-purpose flour
1 teaspoon
baking powder
½ teaspoon salt
Filling:
⅔ cup sugar
3 tsp. ground cinnamon
4 tbsp. butter
Directions
Cookie:
1.
In the bowl of your stand mixer cream together butter and sugar.
2.
Beat
in eggs, one at a time—mixing well in between each egg.
3.
Beat
in vanilla.
4.
In a
separate bowl whisk together flour, baking powder, and salt.
5.
Mix
dry ingredients into butter/sugar mixture.
6.
Chill
dough for 30 minutes.
7.
Roll
out dough into a square that is a ¼ inch thick.
8.
Spread
filling all over dough.
9.
Starting
at the long end, roll dough up.
10. Wrap with saran wrap and refrigerate for
30 minutes.
11. Preheat oven to 400ยบ.
12. Cut cookies into ¼ inch thick and place on
cookie sheet 2 inches apart.
13. Bake for 7-9 minutes.
14. Frost with buttercream icing.
Filling:
1. Stir together sugar, cinnamon,
and butter.
