The Most Delicious Way to Cook Green Beans

There are always tons of green beans at the farmers market and they're usually really cheap but we never really knew what to do with them so we wouldn't buy them very often… and then one day we just decided to try them and see what happens. I scoured the internet for recipes and then decided to combine what I liked about all the recipes I found and now I have developed, what I am certain, is the most delicious way to cook green beans!

First cut the ends off the green beans and chop up some garlic.

I use butter, olive oil, and chicken broth to cook them. So easy and so delicious!

Drizzle 2-3 tablespoons of olive oil in the pan and melt 3-4 tablespoons of butter over medium high heat.

Wait for all the butter to melt and look foamy.

Next, add the chopped garlic.

Let the garlic cook for 2-3 minutes and then add the green beans.

Stir them around and get them as flat as possible in the pan. Cook them until they turn bright green.

Then add some salt and pepper.

And cook for a couple more minutess, stirring occasionally.

Next, add enough chicken broth to cover them and stir.

Let it come to a rapid boil.

Next, cover them and turn the heat to medium low, venting the pan so steam can escape. Cook for 15-20 minutes or until most of the chicken broth has cooked out. Serve warm.

  4. They seem like they would be overcooked, but they don't look like it in the photos. Will have to give this a try.

  9. I have 18 for dinner, if I double the recipe would it be enough? I also have another vegetable.

    1. In my experience, 1lb of beans (like this recipe calls for), is good for about 4 people. If you have 18, I'd say at least triple the recipe, as long as you have another vegetable. I might even quadruple it though, since people are saying how good these are :).

  12. Do you think it would work just as well without butter? Or can I substitute? I'm dairy free.

    1. You could probably do without it, or substitute something else. Let me know if you try it and how they turn out! Thanks! :)

    2. I'm non-dairy as well and will substitute plant-based butter along with veggie broth.

  13. Could I use beef broth instead of chicken broth? We ate at a restaurant in Hampstead, NC and the greenbeans were cooked in beef broth.

  17. You should use the cooking liquid to make a sauce. Would be a waste to chuck it out.

  19. I add bacon or salted pork and a lil bit of distilled vinegar. Oh and onion. Can also use canned or frozen.

  20. Just tried this tonight...added some lemon pepper to the seasonings as well. Only added 2 cups of broth and had plenty left over even after steaming off the liquid, so am using it to saute up a pound of cubed up chicken! It's awesome.

  21. Has anyone tried this with a vegetable broth? I'm not a chicken eater, but I love green beans.

  22. Made these today with beans and garlic fresh from the Farmer's Market...YUM-O! Thank you for sharing. I love that I didn't have to use salted pork or other fat (as my Southern roots taught me - smile). I love, too, that you can cook to the "done-ness" that you like - crisp or soft. These will be in our dinner rotation for sure!

  23. It's almost the classic southern way to cook greenbeans. Here's the difference slice the onion and 1/4 pound of good quality smoked bacon with a teapoon of garlic into the simmering chicken broth until the Bacon's well cooked and the onion is clear and the garlic is well saturated. Next add green beans and salt and pepper to taste. Make plenty, because everyone enjoys these green beens.

  24. I've cooked my gb's this way for years - so delicious! Or if I'm making a pot roast I'll use the juices from that instead of the chicken broth.

  25. A lot of people in the south break each green bean into several pieces and cook them for hours with a piece of pork. Delicious ! I'm going to try your recipe though.

  27. I made this recipe, AND my husband said it was the best green beans he ever had!
Mind you......we're in our '60's. We've had green beans before, however, not as good as this.
Move over Thanksgiving, there's a new dish on the table!

  31. I'll never again make green beans any other way. I added a chopped slice of bacon and a tiny bit of onion when cooking the garlic. Better than Grandmama's!

  33. Yes, these are delish. I’ve been making them this way for 45 years. My aunt taught me. I add chopped, sweet onions and now use vegetable broth since changing to a vegan diet.

  40. This recipe sound oddly close to what I do. Add just a little oregano and thyme and simmer a few minutes before adding the beans.

  41. I've always cooked my green beans this way but never thought to add chicken broth! Sounds great and will do that for sure!
