Ganache is actually very easy to make... I will say that it can be very bitter, especially if you don't use the best chocolate possible. You can use bars, chips, pretty much any form of chocolate. I was using this ganache with something very sweet so I didn't mind using not so great chocolate and having somewhat bitter ganache.
I like using a 1:1 ratio with chocolate and heavy cream, I like the consistency better and the creaminess.
First you just need to give the chocolate a rough chop, if using a bar.
Next, heat the cream on the stove stop to a boil.
Pour the hot cream over the chocolate.
Let the hot cream soften the chocolate for 2-5 minutes.
Then just stir with a whisk until it is all incorporated and smooth.

Chocolate Ganache
Ingredients:
12 oz. Heavy Cream
12 oz. Bitter Sweet or Dark Chocolate
Directions:
1. Give chocolate a rough chop and place in large bowl.
2. Heat cream over medium-high heat to a boil, boil for about 3 minutes stirring constantly.
3. Pour cream over chocolate and let sit for 2-5 minutes to soften chocolate.
4. With a whisk stir until smooth.
