Super Easy Delicious Apple Crisp


This is a twist on my moms super easy recipe--she usually uses pre made apple pie mix, and I am NOT a fan! So, I took the simplicity of her recipe and made it my own by using my favorite apple pie filling!

Ingredients

    Filling:
2-3 lbs. baking apples, I used a mixture of pippin, granny smith, golden delicious
1 cup heavy cream
½ brown sugar
½ cup sugar
½ tbsp. all-purpose flour
2 tsp. vanilla
¼ tsp. cinnamon
    Topping:
            1 box of vanilla cake mix.
            1 cup (2 sticks) butter, melted.

Directions
   
1.     Preheat oven to 375ยบ. Grease with butter the bottom and sides of 13x9 glass dish.
2.     Peel apples, slice into small even sized pieces.
3.     Whisk together heavy cream, brown sugar, sugar, flour, vanilla, and cinnamon.
4.     Pour over sliced apples and stir to coat apples. Peel apples, slice into small even sized pieces.

6.     Pour over sliced apples and stir to coat apples.
7.     Pour apples into glass dish, spreading out to make it as level as possible.
8.     Pour dry cake mix over top apple mixture.
9.     Cover with melted butter, making sure cake mix is fully covered.
10.  Bake for 35-40 minutes.

Cinnamon Roll Cookies

Cinnamon Roll Cookies

Ingredients

Cookie:
    ¾ cup butter, softened
½ cup white sugar
½ cup brown sugar
1 tsp. cinnamon
2 eggs
½ teaspoon vanilla extract
2½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt

Filling:
    cup sugar
    3 tsp. ground cinnamon
    4 tbsp. butter


Directions
    Cookie:
1.     In the bowl of your stand mixer cream together butter and sugar.
2.     Beat in eggs, one at a time—mixing well in between each egg.
3.     Beat in vanilla.
4.     In a separate bowl whisk together flour, baking powder, and salt.
5.     Mix dry ingredients into butter/sugar mixture.
6.     Chill dough for 30 minutes.
7.     Roll out dough into a square that is a ¼ inch thick.
8.     Spread filling all over dough.
9.     Starting at the long end, roll dough up.
10. Wrap with saran wrap and refrigerate for 30 minutes.
11. Preheat oven to 400ยบ.
12. Cut cookies into ¼ inch thick and place on cookie sheet 2 inches apart.
13. Bake for 7-9 minutes.
14. Frost with buttercream icing.
    Filling:

            1. Stir together sugar, cinnamon, and butter.

Homemade Alfredo Rotini

Homemade Alfredo Rotini

Ingredients

-       Whole Wheat Pasta of your choice
-       1 ½ sticks of butter
-       1 ½ cup heavy cream
-       3-4 cups of freshly grated parmesan cheese

Directions
1.     Melt butter in saucepan over medium-high heat.
2.     Add past to salted boiling water.
3.     Grate cheese and place in mixing bowl.
4.     Pour heavy cream into saucepan with butter. Whisk together.
5.     Drain pasta when fully cooked.
6.     Continue whisking cream and butter, season with salt and pepper.
7.     Pour cream and butter into mixing bowl with parmesan.
8.     Let the cream/butter mixture start to melt cheese.
9.     Stir together to combine.
10. Pour hot pasta into sauce and stir.
11. Sauce will thicken as it stands.
